For me, the past few months have been filled with travel and holiday-indulgence. Lately I have been trying to get back into a healthier routine. Last week, I heard a guest on NPR mention the health benefits of keeping fresh flowers in your home. This is a habit that I try maintain, though, sadly, I have been pretty lax about it lately. But no more! I picked up this simple bouquet yesterday and I have felt noticeably better every time I pass through our dining room. I am also trying to eat healthier again (there has been a LOT of BBQ in my life this month). I’ve been consciously upping my water intake and eating more vegetables.

Admittedly, I am anxious for summer and some of these healthy changes are in anticipation of sundresses and swimwear. Just doing what I can to mentally “will” the return of warm weather.

Veggie Sandwich
Ingredients
Whole Wheat Bread
Mayonnaise (Smart Balance)
1 Garlic Clove, minced
1/2 tsp Lemon Juice
Cucumber, thinly sliced
Sprouts
Roasted Red Pepper (from a jar)
Feta Cheese

Instructions
In a small bowl, combine mayonnaise, minced garlic, and lemon juice. Spread mixture on whole wheat bread (I toasted mine first). Fill sandwich with cucumber, sprouts, roasted red pepper, and feta cheese. Enjoy!
