Steak with Arugula

¬†This dish is one of Suj’s specialties. It’s a perfectly grilled steak over a bed of arugula with a balsamic reduction and parmesan cheese. Doesn’t that sound amazing? Well trust me, it is.

Instructions:  You will need 1-2 large steaks (we used a flank steak from whole foods). Rub the meat with olive oil and season with salt, pepper, and a little crushed red pepper. Grill the meat to medium rare. Since we cooked a flank cut, we grilled it for about 4 minutes on each side. Remove the steak from the heat and let it rest for about a few minutes. In the mean time, place the arugula on a serving dish. To make the balsamic reduction, combine 1/2 a teaspoon of sugar with 1/3 cup of balsamic vinegar in a small saucepan. Bring to a boil then reduce heat and simmer for 6-8 minutes or until thick, stirring frequently. When the balsamic has thickened, remove from heat and cool for 1-2 minutes then drizzle the reduction over the arugula. Slice the steak and serve on the arugula and balsamic. Finish with shredded parmesan cheese and a little lemon.
