Turkey and Bell Pepper Chili

This cold weather has me craving comfort food! When I mentioned this to Ashley the other day, her eyes lit up and she assured me that she has “The Best Chili Recipe Ever.” I had never made chili before so I gave it a shot. And Ashley was totally right. Her chili recipe rocks. I served it with fresh baked cornbread (a box mix, it was a long day) and the combo totally hit the spot over the cold weekend.

Ingredients: 
1 lb of ground turkey
1 can of diced tomatoes
1 can of condensed tomato soup
1 can of black beans
1 can of kidney beans
1 can of water
2-3 diced red and green peppers
1 diced onion
5-6 diced mushrooms
garlic, cumin, chili powder, cayenne pepper, salt – to taste (I used about 2 tsp of each)
Directions:
Brown the turkey then combine all ingredients in a large pot, dutch oven, or crock pot. Bring to a boil then reduce heat to medium low and simmer for an hour. Serve with fresh cilantro and cheddar cheese or sour cream.
