Smoked Cheddar and Lentil Burger

I have been excited to post this recipe for a while because these burgers turned out so well. Last week, my roommate, Scott, made these veggie patties for the rest of the house and we were all very impressed. You can assemble them in a bun, as you would a classic hamburger, but we ate ours as open-faced sandwiches on toasted bread. I can’t believe that this was the first time I had eaten a home-cooked lentil burger (I usually opt for black bean burgers). Fortunately for me, Scott is very skilled in the art of vegetarian cooking, and I am able to steal all sorts of recipes from him!

I experimented the next day with a leftover veggie patty and created what I like to call the “Smoked Cheddar and Lentil Stack” by adding a poached egg and some greens. (And then I covered it with hot sauce. Of course.) I highly recommend either preparation! You can find the original recipe here.
