Cinnamon Raisin Egg Sandwich

Last night I was craving this sandwich after coming home from two very fun happy hours. I was introduced to this creation about a year ago by my foodie boyfriend, and I will admit, I was quite skeptical at first. This sandwich has a number of ingredients that I would never think to put together, but the combination is actually really delicious.

This recipe is so easy but the results look and taste quite impressive.This sandwich hits the spot since it is all at once sweet, salty, and spicy. It is perfect for brunch or a late night snack.

1 cinnamon raisin english muffin (I prefer the Thomas’ brand*)

1 egg


2 tsp. butter


Directions: Melt butter in pan. Fry the egg on medium heat (at 7 on a gas stove) until the white appears solid (about 3-5 minutes depending on how “yolky” you like your eggs). While the egg is cooking, toast the bread in the same pan, as shown above. Place the egg on the bottom half of the english muffin and top with cilantro and sriracha. Voila!
