Couscous with Feta and Sun-dried Tomatoes

My boyfriend created this recipe on the fly one evening when we were throwing together a meal for friends, and it has definitely become one of my favorite go-to side dishes. This recipe is fresh, healthy, and delicious, but I really love it because it is just as good served warm as it is cold, when I take the leftovers to work the next day.

{Start by chopping all the ingredients}

{Now for the secret ingredient … chickpeas! These add protein and make the dish feel more substantive. I don’t eat much meat so I try to throw protein rich legumes into dishes whenever I can, and chickpeas are the perfect addition to this recipe}

Serves 6

Total cook time: 25 mins

Ingredients:

1 cucumber, peeled and chopped

1 can olives, chopped

1/4 cup sun dried tomatoes

1/2 cup feta cheese

1/4 cup chopped cilantro (or about 1 tablespoon of chives, finely chopped)

3/4 can of chic peas, rinsed (they are “packed with protein”)

1 box of couscous, prepared according to package (I like to use the garlic and olive oil flavor)

Directions: Just throw everything into a large bowl and toss together. Feel free to play around with the measurements and ingredients. This recipe is more of an art than a science.
